Pad Thai easy and yummy recipe

So I tried this recipe and it was super yummy.
I had to double the sauce and i wish i used a little less lime juice. Next time I hope to add some veggies and more peanuts. Anyways you should try it out.
Super easy and delicious and it doesn't use all those crazy ingredient.

Easter = Eggs

Easter is such an exciting time of year. Spring is finally here, kids are all dressed up, and jelly beans are cheap ;)
The Sunday before Easter (which Sean and I completely believed was the real Easter) we participated with the majority of Sean's family in singing Consider the Lilies in his parents ward. It is such a beautiful song and it was amazing to sing with such a talented family. It felt as if it was an actual singing group....who knows, we could be the next Von Trap family! (Ironic that we watched the Sound of Music that day as well)

The rest of that day was spent with the family in celebrating Easter with an egg hunt for the kiddies and a ham dinner (the source for much of our confusion about the real Easter day).

Now real Easter was a more relaxed day at our apartment. We had gotten a call the night before asking if we could substitute for the sunbeams class in primary which of course we accepted.
Kids are fun. Really fun. I wish I could remember all of the funny things they said since I was trying so hard not to laugh through half of the class. When asking what Easter was about half the class announced it was "EGGS!". It took some convincing that the reason we have Easter because of Christ and not because of the Easter Bunny but by the end of the class they all knew the word "Resurrection" and the dance we used to teach them about it. One of the little girls named Railee liked my lipstick and throughout the class kept coming up to me and saying "red lips, i want red lips".

After church Sean and I enjoyed a long, well deserved nap that is somewhat embarrassing to say how long it was (4 hours), made a quick dinner, and decided to have me drive Sean's scooter to grandmas house. It was exciting and every time I used the blinker, made a turn, or used the breaks I squealed in delight that I was actually driving the thing!

To end the day we shared a wonderful two hours watching new episodes of Dr Who on a somewhat illegal but not website.
It was a perfect ending to a nice day.

Anyways I was able to spend some good time with my own Easter Bunny who seemed to know it was his day jumping around happily everywhere and making sure he got plenty of cuddles!

Date With Lincoln

Last week Sean and I took my grandma Omi on a date! we had stopped by a few days before and she was so happy to see us that it meant a lot that we take the time to spend with her. Anyways... so Sean Picked her up as I made dinner, which we ate before heading to the dollar theater (big spenders here) to watch Lincoln. I was worried about it because I have a few small issues with History/ the civil war and I was worried I would get bored but I did want to see it because it got such great reviews and Sean and I have been on an Abraham Lincoln kick (we listened to the book on cd Abraham Lincoln vampire hunter which was completely awesome and surprisingly informative. No Joke!).

Well it turns out the movie is absolutely fantastic. Everything is just amazing in the movie and I recommend it to everyone! The script was great, acting spot on, and sets beautiful. I really enjoyed getting to know more about the events and people that led to the passing of the emancipation proclamation. In this movie, history is no longer history but a story that everyone can feel connected with. Brilliant.This movie will be on my shelf someday soon I can promise you that.

I seriously suggest that everyone watches this movie.

Music Mood

There is a whole lot of good music out there (and bad but I dont concern myself with that)and I hope to capture as much of it as i can. Right now there are a few albums that I am wanting so I thought I would post what I am looking at now....

 now this is just a short list now but I guess this is just the mood I am in. I can just see myself listening to these while its raining outside (which it is) or while eating a nice quite dinner. It just sounds nice to me.

 In Turkey we used to listen to music while we ate and I miss that. We really enjoyed our time eating, chatting, and listening to good music. One of my favorite memories in when I was in Guatemala and we were on our way from another adventure in the jungle, driving back on dirt roads in the pouring rain. It was still warm but the rain completely drenched everything with waves that poured down the windshield. While driving through the wet jungle I was listening to Enya and I truly felt enriched by everything around me. It was beautiful chaos. Anyways I believe in the power of music and today is a day for my pandora civil wars channel. Sweet and blissful. Take Care!

A Perfect Sunday Afternoon

A couple weeks ago I was having a hard time with church, school ,and a major lack of sleep. All this led to a minor breakdown which was not super pretty. This is why Sean is such a hero! He takes care of me even when I am a major mess. Anyways... even though we were both super stressed, he had us pack up the french frys we were making, a blanket, a few balls and we took off to a destination he had in mind.
 Once I finally guessed where we were going things were looking up. The sun was shinning, I had the window rolled down, we were listening to Abraham Lincoln Vampire Hunter, and we were on our way to discovery park. As soon as we arrived we spent the next half hour or so exploring the park and having a good time.
I suggested that we call some people and see if they want to meet us there for a relaxing afternoon. Sean, the amazing man that he is, had already contacted a bunch of people and his sister Kristin and her family as well as Seans BFF Chris were on their way! People! We were going to see people! It was very exciting considering we had been stuck inside to ourselves doing HW all week.

Sean and I set up a little pic-nic eating our french frys and blowing bubbles until everyone got there. We got to play at the playground with Kristins two adorable girls and then play a little soccer/ volleyball while some played with chalk.

It was a wonderful, relaxing, friendly Sunday afternoon.

After the park Sean and I were invited to go to his sister Melissa's house who couldn't come to the park. We went and ate spaghetti with her four cute girls and then played with them for the next couple hours. I love those girls so it was a great time.

Anyways, what Sean and I learned is that family and friends are important, relationships are important, and if you take time for those, then things will fall into place. Even though Sean and I were stressed and worried, we took time to enjoy our day, enjoy each other, and enjoy time with our family and friends.

 This week has been beautiful with some must missed sunshine but a plethora of papers is keeping me busy and indoors like a sad hermit. As I said here in the title of this blog, there is nothing like a little Mickey Mouse to brighten up my day.

  2. If I want french Fry's  you get them for me.
  3. You love my cooking and especially my Asian cooking which I was worried about.
  4. You love eggs in your noodles now and every time I ask if you want noodles you ask if it will have an egg in it.
  5. I don't know how you do it but you can make the most horrible situation bearable with just a hug and a kiss.
  6. I love your mad face! It just happens to be so stinking cute!
  7. I love that you love puppies so much.
  8. You let me use you as a footstool.
  9. You love your family....and they are awesome!
  10. You are the most friendly person: you say hi to everyone and most of the time you remember their name.
  11. Along with the last one, you are able to make everyone feel comfortable and welcome.

  13. I love that on our second date we took "engagement" pictures and it was totally cool.
